• Fresh Vermicelli:

Blanch vermicelli in boiling water for about 8 minutes, then remove and rinse with cold water until the noodles are cool and drain. Vermicelli can be stored for 6 - 8 hours without spoiling.
Serve fresh vermicelli with grilled meat, spring rolls, or use with your preferred broth.

• Stir-Fried Vermicelli:

Blanch vermicelli in boiling water for about 7 minutes, then remove and rinse with cold water until the noodles are cool.
Prepare a hot pan, add a little cooking oil, then stir-fry various vegetables, meats, mushrooms, seafood, and seasonings.
Once the mixture is cooked, add the vermicelli to the pan and stir-fry for about 30 seconds until ready to serve.

Note: Do not soak the vermicelli in cold water before blanching. The vermicelli will not be as dry as blanching in 100% boiling water.
